1. Green Bean Salad with Lemon Vinaigrette
A refreshing side that lets the beans stay the star. Blanch fresh green beans for two to three minutes until bright and just tender, then plunge them into ice water to keep their colour and crunch. 2. Green Beans Almondine
A French classic that feels fancy but takes minutes. Sauté blanched green beans in butter with sliced almonds and a little garlic until the almonds turn golden, then finish with a squeeze of fresh lemon juice. The toasted almonds give a lovely crunch against the tender beans.
3. Grilled Green Beans

How to Prep Green Beans
A little prep goes a long way. Rinse the beans under cool water and snap or trim off the stem ends. For most recipes, blanching is your friend: drop them in boiling salted water for two to three minutes until they turn vivid green and just tender, then transfer them straight to a bowl of ice water. This locks in the bright colour and crisp texture and stops the cooking exactly where you want it. From there they are ready to toss into salads, sauté, or grill.
