Squash are not just delicious, but also super versatile and nutritious? Not only can you enjoy squash in savory dishes like squash soup or as a roasted vegetable side, but the leaves and tender shoots of squash plants can also be cooked and eaten! In fact, squash leaves make for a tasty addition to omelets and squash shoots can be pureed into soup. Squash are packed with vitamins and minerals, making them a healthy addition to any meal. Squash are also packed with antioxidants and vitamins (and have no fats), and can be prepared sweet or savory. They come in a variety of colours and shapes from round and elongated, scalloped and pear-shaped with flesh that ranges from golden-yellow to brilliant orange. Squash are easy to store over the winter in a cool basement.
Squash can be eaten in many different ways. It can be roasted, baked, mashed, or even made into soup. One of the most popular ways to eat squash is to stuff it. Once you’ve cut it in half and scooped out the seeds, you can stuff it with rice, meat, and vegetables. Then bake it until tender. Yum!
Butternut squash is a favourite this time of year and tastes similar to sweet potatoes with a sweet, nutty flavor. The more orange the colour, the riper, drier, and sweeter the squash. Butternut is a common squash used in making soup because it tends not to be stringy.
